• 50/50 Valley/Highland mix to blend pepper/earthy and sweet/fruit character of each region.
• Selective agave harvesting to pick superior quality piñas:
- 6-14 years old, minimum of 21 brix , avg. 28 brix sugar content.
- Trimmed close to the heart to eliminate any oily/waxy taste.
• Cooked in a traditional hornos for 36-54 hours to retain sweet mellow flavors.
• No diffusor usage - only traditional maceration.
• Proofed with pure volcanic well water, directly from springs of the “Volcán de Tequila”
